Ingredients
- 1 ¼ cups plain flour
- ½ tsp baking powder
- ¼ tsp sea salt
- 65g unsalted butter (room temperature)
- 1 cup panela or brown sugar
- 1 egg
- 1 tsp vanilla extract
- ¾ cups chocolate chips
Method
Step 1
Preheat oven at 180C. Line tray with baking sheet.
Step 2
Place flour, baking powder and salt together in a medium bowl. Add butter and sugar in the flour mixture and mix with hands.
Step 3
Add the egg, vanilla extract and mix well with a fork and finish mixing with your hands.
Step 4
Use your hands to bring the dough together.
Step 5
Add the chocolate chips to the dough mixture and mix thoroughly. We use both milk and dark chocolate chips.
Step 6
Shape the dough into a log. This will help to portion the cookies evenly.
Step 7
Cut and shape the dough in balls; don’t flatten them. You don’t have to make them into perfect round shapes.
Step 8
Bake cookies for 10 minutes or until brown. Transfer the cookies on a cooling rack.
This will yield 15 cookies.
